Recipe:
1 stick unsalted butter
1 stick margarine, both at room temperature
3/4 cup brown sugar, packed
3/4 cup granulated sugar
(blend these ingredients to make a paste)
Add: 2 eggs
1 and 3/4 cup unbleached all purpose flour
(sometimes I substitute 1/2 cup whole wheat)
2 cups oatmeal
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon, dash of nutmeg
Blend all of this together, then remove from mixer stand and stir in by hand: a cup each of chocolate chips, pecans, coconut, and craisins, whatever you've got on hand!
Preheat oven to 350 and bake until golden brown, about 14 minutes each.
Makes about 4 dozen.
